Our Production Process

Grape selection process

1. Grape Selection

Our process begins with carefully selected California grapes, hand-picked at peak ripeness to ensure optimal sugar content and flavor profiles. We work exclusively with vineyards that share our commitment to sustainable farming practices.

Unlike traditional Arak that often uses dates or figs as a base, our California-inspired approach focuses on premium wine grapes that provide a clean, refined foundation for our spirit.

Fermentation process

2. Fermentation

After crushing, the grape juice undergoes a carefully controlled fermentation process in stainless steel tanks. We maintain precise temperature conditions to preserve the delicate flavors and aromas that will eventually define our Arak.

This initial fermentation typically takes 10-14 days, during which our master distiller monitors the process closely, ensuring the development of a clean base wine with balanced acidity and alcohol content.

Triple distillation process

3. Triple Distillation

Our signature triple distillation process is what truly sets Gazelle Arak apart. Using traditional copper pot stills, we distill the fermented grape base three separate times, each pass increasing the purity and refining the character of the spirit.

During the final distillation, we introduce the finest natural anise, imported directly from the Mediterranean. This infusion imparts the distinctive licorice flavor that is the hallmark of authentic Arak.

Aging and bottling process

4. Aging & Bottling

After distillation, our Arak rests in neutral vessels that allow the flavors to harmonize without imparting additional character. This resting period is crucial for achieving the smooth, balanced profile that distinguishes Gazelle Arak.

Finally, each batch is carefully filtered and bottled by hand in our custom glassware, sealed, and labeled with batch and bottle numbers that ensure traceability and quality control.

The Art of Triple Distillation

Our triple distillation process is the heart of our craft, representing generations of distilling expertise and our commitment to exceptional quality.

First Distillation

The initial distillation separates alcohol from the fermented grape base, creating a raw spirit of approximately 30% ABV. This first pass removes impurities and begins to concentrate the essence of the grapes.

Second Distillation

The second distillation further refines the spirit, increasing its purity and alcohol content to around 70% ABV. Our master distiller carefully separates the "heart" of the distillate, discarding the "heads" and "tails" to ensure only the finest portion is retained.

Third Distillation

During the final distillation, we introduce premium anise seeds to the still. As the vapors pass through the anise, they extract essential oils that impart the characteristic flavor. The resulting spirit is exceptionally smooth and pure at approximately 80% ABV before being diluted to our bottling strength.

No Additives

Gazelle Arak contains only three ingredients: grapes, anise, and water. We never use artificial flavors, colors, or sweeteners.
